New Zealand

This small country in the southwestern Pacific Ocean is comprised of two main islands. More than 1,000 miles east of Australia across the Tasman Sea, New Zealand was a former colony of the British Empire. The culture of the island was shaped by European immigrants and the Maori people, of Polynesian descent, who migrated to the islands about 1,000 years ago. Early colonists, British mainly, hoped to rely on the familiar foods of home. Meat and potatoes, all of which were introduced into New Zealand, remain important parts of the diet. However, conservative British cooking has slowly made room for Mediterranean and Asian styles that celebrate fresh local ingredients. New Zealand is known for its lamb, mussels, and its booming wine industry. Like the English, New Zealanders drink a lot of tea, which is not to be confused with their main meal, usually eaten in the evening, and often called “tea.”

Creamy Macaroni and Cheese

This was very very good! I added some chopped onion and ham to the mixture, which offset the mustard taste very well. I think this will be my new mac and cheese recipe from now on.

Baked Fudge Cake

Fantastically scrumptious! Wonderful recipe for brownies. I baked 45 min. and then covered it and baked for another 15 min.Tastes great with ice cream.

Vegan-Friendly Falafel

Loved this! I've been trying to make falafel like this for years with no success. I baked mine rather than frying and it came out perfectly. It won't be long before I can recite this recipe by heart. Thanks very much!
