The Cornhusker State perches above Kansas, beneath South Dakota, and is bounded on the east by the Missouri River, which runs through Omaha, Nebraska’s biggest city. Early pioneers rolled through Nebraska in wagon trains, following the Platte River along the Oregon, California, and Mormon Trails. Homesteading was not legal until the land was declared Nebraska Territory in 1854. The land was considered hostile and inhospitable to agriculture. Part of the Great American Desert, Nebraska was a treeless expanse of tall-grass prairie. (The national holiday Arbor Day was started in Nebraska City as a way to entice Nebraskans to plant trees.) Irrigation helped transform the state into some of the richest farm and ranch land in the Great Plains. Today, Nebraska produces about one quarter of the steaks Americans consume. Among the early homesteaders in Nebraska were Germans, Scandinavians, and some 50,000 Czech immigrants. The Germans introduced bierocks (beef and cabbage pastries) to Nebraskans. The Czech settled in towns like Clarkson, Prague, Schuyler, and “the Czech Capital of Nebraska,” Wilber, making their mark on the cuisine and culture of the state.

Lemon Poppy Seed Amish Friendship Bread

REALLY, REALLY good! I just made this up last night & tried a piece with my coffee this morning. There is no calling this one dry like the last Friendship Bread I tried from this site. Can't wait to take this one & share with friends & coworkers! Thanks for posting this one - it's a keeper!

Buttermilk Cinnamon Bread

This is a good, not great tasting bread. I did as other reviewers had posted and added a 1/2 tsp of vanilla to the oil/sugar/buttermilk/egg mixture (I halved the recipe for only 1 loaf). I had also followed another reviewers suggestion and didn't use all of the cinnamon & sugar mixture and after tasting the bread I wish I had used as much as the recipe had called for. I will make it again but in the meantime I'll be searching for add-ins to give it a little more taste and moisture.

Christmas Seafood Casserole

This is a really wonderful recipe. You can switch around the seafood as much as you please. For those that are having problems with this being too soupy, it might be your seafood. Stores sometimes fill seafood with water, especially scallops. When cooked, the seafood releases the water. Make sure you dry off your seafood, or even let it drain for a few minutes on a paper towel. My friend gave me this advice and it has helped tremendously with my seafood recipes. If that doesn't work, you can always pour this over noodles, and no one will ever know! :) Happy eating!
