I am a nurse by profession but currently work part time as a Biology and Botany teacher. Cooking is my passion and favorite hobby. I spend most of my time in the kitchen responding to 3 kids yelling "I'm hungry" all the time. I love planning menus and especially love being in a Gourmet Club with my husnband Dan and some of our best friends. I have fun trying new recipes but it is the old tried and true that I stick to. I like to read, travel, and spend time with family and friends. I also enjoy speaking to MOPS (Mothers of Preschoolers) groups in my area about cooking, entertainment, and hospitality. Pumpkin Chip Cupcakes

Preparing to make this recipe I realized I bought pumpkin pie puree instead of plain pumpkin. So I omitted the spices and used all purpose flour. Fearing the mixture would stick to the paper cups, I sprayed them with Pam. The cupcakes came out great. Not too sweet. The icing added all the sweetness needed. I'll be making these again. Thanks for a good recipe.

Chicken Breasts Stuffed with Crabmeat

Okay...so I had to use what was on-hand cuz we are moving soon and I am trying to clean out the perishables. I didn't have regular cream cheese, I had the Garden Veggie flavor...and I didn't have the fresh spices, so I used dried...and no dill, so I left it out. My hubby had packed the flour, so I used Bisquick...and my son is allergic to eggs, so I used an applesauce/milk mixture. I also used the recommendation of baking so as not to burn it on the stove top. And even though I basically created a new recipe...THIS WAS AWESOME!!! We ate so much we hurt! This is our new favorite chicken recipe...and SOOOOO easy...which is hard to believe when you taste it! Truly delicious!!!

I used crushed almonds instead of walnuts, half the sugar, and I baked them in muffin tins for 30 minutes till deep golden brown on the tops. They were fantastic.
