The Bluegrass State marks the transitional space between the South and the Midwest. It sits above Tennessee, below Indiana and Ohio, and just west of the Virginias. The discovery in 1750 of the Cumberland Gap through the Appalachian Mountains opened up Kentucky to settlement. Hardy souls followed such trail-blazing pioneers as Daniel Boone along the Wilderness Road. Wheat was a bust in Kentucky, but corn grew relatively well. It was a critical food for both farmer and livestock. Plus, corn could be fermented into whiskey. Created by a Kentucky Baptist minister, bourbon is the only booze born in the United States. Though pork is king in Southern barbecue, western Kentucky stands out for its mutton barbecues – standard procedure at church events for more than 150 years. A couple of Louisville inventions deserve special notice, as well. Henry Bain sauce, named after its inventor, the head waiter at Louisville's Pendennis Club, is a sweet, tangy, spicy concoction best served with wild game or beef tenderloin. And the Hot Brown sandwich was created by the chef of the Brown Hotel. It’s an open-faced sandwich topped with turkey, tomato, bacon, and cheese sauce.

Egg Salad I

This recipe is delicious! But I did, however, change it up just a little bit to suit what I had available. I used regular mustard rather than Dijon, and I ADDED a teaspoon of pimentos. I also decreased the amount of onion. Thanks for sharing this recipe with us, it will be PERFECT for summer cook-outs. Oh by the way, I like the fact it only calls for a tablespoon of mayo unlike most the other recipes on this site. As much as I LOVE mayo, more than a tablespoon is not necessary. I made this recipe again tonight (4th of July) but this time I added 3 small boiled potatos (cubed), and a tiny amount of black olives. Again, we loved it. This recipe is a great springboard to other ideas. Thanks again.

Fried Onion Rings

Boy these are good! Cheap snack... Only thing I did different is that I cut onions (1/2 in.cut thick, they shrink), soaked in coldwater while I was doing everything else. Dusted in flour or bisquik, in a ziplock...then into the batter! Batter should foam abit before you use, beer and flour combo makes bubbles! Absolutely picture perfect onion rings! I would have taken a pic but...I ate them! Freezing about a dozen to see if they will work frozen....

Cottoneyed Peas

I'm not a big fan of black eyed peas but doctored up like this they were fantastic!!! The bacon really gave a great flavor to the dish. Thanks!!!
