INGREDIENTS
2 1/4 cups sugar
3/4 cup baking cocoa
1/3 cup all-purpose flour
1 tablespoon instant coffee granules
Dash salt
3 cups milk
4 eggs, beaten
4 cups half-and-half cream
2 cups heavy whipping cream
3 tablespoons vanilla extract

DIRECTIONS
In a large heavy saucepan, combine the sugar, cocoa, flour, coffee and salt. Gradually add milk and eggs; stir until smooth. Cook and stir over medium-low heat until mixture is thick enough to coat a metal spoon and reaches 160 degrees F, about 15 minutes. Refrigerate until chilled. Stir in the remaining in the remaining ingredients. Fill ice cream freezer cylinder two-thirds full; freeze according to manufacturer's instructions. Refrigerate remaining mixture until ready to freeze. Remove from the freezer 10 minutes before serving.

I just finished making this ice cream, it is outstanding, this best chocolate I have ever tasted. I changed it alittle since I did not have enough half and half, so I added more heavy crean. The instant coffee enhanced the cocolate. Before it went into the freezer, I had to have a taste, it was out of this world. I give this 5 stars and will make this again.

This is fantastic Ice Cream. The first time I cut the recipe in half but since then I make the full amount. Not only is it fantastic as an ice cream but it also works great as an ice cap. I fill my blender half way with ice, add in a bunch of the recipe mix, some extra coffee granuales to taste and some milk. Blend this all together and you come really close to a Tim Hortons Ice Cap. Love this recipe and will make this again and again. Thanks for posting this recipe Mr. McCarty.

SOOOOO GOOOOD! Loved it! this recipe makes a lot of ice cream so if you have a little ice cream maker I would half it! Definatly will make this again!

Really yummy! I used expresso instead of instant coffee and it turned out so smooth. I think the heating binds the fat so it doesn't stick to your mouth, it just tastes wonderful. Can't wait to make more.

This was our first attempt at homemade ice cream in several years, and the whole family loves it. I may add extra cream next time, as it was a little hard to scoop, but the flavor was great. We added slivered almonds to one batch and m&ms and peanut butter to another.
